I’m not an expert at wedding cake decorating. I’ve only creating three wedding cakes, but with each one I have improved my wedding cake making skills.
Let’s get this out in the open right off the get go. I don’t like fondant. I don’t use fondant. The fondant roses on the cakes below were created by my sister.
I’ve learned that when creating a wedding cake you need the right tools and the right procedure!
The right tools are needed.
- Cake layer cutter
- Angled spatula
- Cake boards and dowels
The right procedure is needed.
- The right ombre colours
- Level the layers
- Crumb coats
Frosting, levelling the cake, putting layers together, and crumb coat were done the day before. Only the decorating needed to be done on the morning of the wedding, on location. After watching a cake decorating tutorial I discovered crumb coats which has changed my cake decorating life! I might be in love with crumb coating.
- Layer by layer
- Dowels and cake boards.
This was the first time that I have used dowels and cake boards. Such a important tools for putting a cake with more then two layers together. As you can see in the above layer, the dowels are level with the cake. Then you place the next layer on top, which is sitting on a cake board.
- Put together at location if possible!
So far, I have been able to put my cakes together at the location. This is very helpful as there is less chance that you will have a messed up cake when you get to your location.
The above photo is my working station on location. I don’t know if you can tell from the photos, but I put it together in a workshop! That was a first! At least it was a prettied up workshop.
If you make cakes, do you have any tips for a newbie? Any disaster stories that go along with transferring a cake from one place to another?
If you don’t make cakes but love to eat them, what’s your favourite style and flavour for a wedding cake?
I’d love to hear from you!
Love the presentation: always wondered how the layers stayed together. I remember carrying my sister’s wedding cake on my lap in a truck, hoping for no bumps or quick stops. It survived, but I like your idea better. Great workshop (says MOB – mother of the bride).
Thanks for the comment!
I’m so glad you didn’t have any problems with carrying your sister’s cake on your lap. Sometimes I watch cake shows on TV and think, well maybe if I had a big van I could do it too, but for now I’ll stick with making it at the location as long as possible!
I love the ombre frosting and I incredibly impressed by anyone who an put a cake like that together and make it looks so beautiful! I had to look up what a crumb coat was because I had never heard of it. Learn something every day! 🙂
Thanks Becky! It was definitely fun to put together! One of my favs so far. Yes, the crumb coat… something I’ll always be sure to do from now on. Glad you could learn something new! 🙂
