Wedding Cake 101

I’m not an expert at wedding cake decorating. I’ve only creating three wedding cakes, but with each one I have improved my wedding cake making skills. 

Let’s get this out in the open right off the get go. I don’t like fondant. I don’t use fondant. The fondant roses on the cakes below were created by my sister. 

I’ve learned that when creating a wedding cake you need the right tools and the right procedure!

The right tools are needed.

  • Cake layer cutter
  • Angled spatula 
  • Cake boards and dowels 

The right procedure is needed.

  • The right ombre colours
  • Level the layers 
  • Crumb coatsFrosting, levelling the cake, putting layers together, and crumb coat were done the day before. Only the decorating needed to be done on the morning of the wedding, on location. After watching a cake decorating tutorial I discovered crumb coats which has changed my cake decorating life! I might be in love with crumb coating.
  • Layer by layer
  • Dowels and cake boards. 

This was the first time that I have used dowels and cake boards. Such a important tools for putting a cake with more then two layers together. As you can see in the above layer, the dowels are level with the cake. Then you place the next layer on top, which is sitting on a cake board. 

  • Put together at location if possible! 

So far, I have been able to put my cakes together at the location. This is very helpful as there is less chance that you will have a messed up cake when you get to your location.

The above photo is my working station on location. I don’t know if you can tell from the photos, but I put it together in a workshop!   That was a first! At least it was a prettied up workshop.

    Piecaken

    I found an interesting concept through a blog that I read (sorry I can’t remember where it was) and was fascinated.  It was such a great idea I wanted to try it.  I told my sister about it and found a video on Youtube to show her.  She was really excited to try it out.  She got to it before I did, but I thought I would share her results with you.  I’m talking about PIECAKEN!  What on earth is that?  I know, I thought the same thing when I first read about this delicious idea.
