The Loft Market – Surprise Surprise

A surprise is what I feel like when I open see the contents of my order from the Loft Market.  This is my second time getting veggies from the Loft Market.  The first time I got a combo bag, which means you get local vegitables and fruit (although the fruit might not be local but it is organic).  This time I got only the bag.  I wanted to see how many more vegitables I would get and we still recived fruit – apples. 

In today’s loft bag this is what I found:
apples, lettuce, winter radish, potatoes, golden beets, jerusalem artichoke, leeks, onions, carrots, winter squash (which I think is a buttercup squash – looks like the one I got last time).

I recognize 8 out of the 10 items and if it wasn’t for the first combo bag I got I would only recognize 6 of the 10 items.  The first week I had no help with what the food items where so I looked up images on the internet and found out that the pinky looking beets that were yellow inside where actually golden beets and that the winter squash was a buttercup squash. This week I actually got an email with the expected food items to come.  Thank goodness!!  

I still need to research winter radish.  I’ve never cooked with leeks before and I definately had to discover what jerusalem artichoke was.  It’s no ordinary artichoke.

What did I find?  Well, I found out that the jerusalem artichoke is kind of like a potatoe.  You can eat it raw, boil it and mash it, steam it, or boil in slice but be sure to add lemon so it doesn’t brown.  I tried it raw since I like raw potatoes.  It wasn’t that bad.  I read that it is also very healthy for you and you get more nutrients and minerals from it raw.  I also read that it can give you a bit of gas if you normally don’t eat it and start to eat a lot of it!  I only put a little bit in the soup! 

What did I make tonight from my loft bag (and previous loft bag)?  I made a potatoe leek soup that also has red pepper, carrots, brocolli, jerusalem artichokes, and garlic and milk and a few spices (last three not from the loft bag!).  How does it taste?  I don’t know yet, well I did a little taste test but I’m still waiting for it to heat all the way through.  So far it looks and smells good!  The real verdict will be what other people think. 

I do need to add that I made a great squash cassarole last week with the butter cup squash.  I also made baked golden raddish which was really great!  If you want to know about a recipe for them, just leave a comment and I will let you know or maybe when I have a bit more time I will blog about it. 

I’m excited to find new vegitables that are in the loft bag, that are local and that are in season.  Oh the freshness in the fall and soon to be winter!

Golden Beets – Who knew!?

I ordered a food bag from The Loft Market and found that some of the items in the bag I had no clue what they were.  I grew up in a home that ate the regular foods, nothing too exotic.  Although I don’t think you can classify golden beets and kale as exotic, just different.  I grew up with red beets, regular cabbage, and you know the normal day to day meat and potatoes with the regular vegetables. 
Now I am looking on-line for pictures and recipes of vegetables that I don’t know and how to cook.  I’ve made Kale Chips.  A napa cabbage salad.  And my favourite so far, baked golden beets.  I never knew golden beets existed.  Did you know there are other types of beets out there? Don’t get me started on all the different types of squash out there! The outside is a pink or light red colour and the inside is actually a golden colour.  Amazing.  God is so creative! 

For the Baked Golden Beets I peeled the beet.  There was no juice like in red beets.  Then, I sliced it.  I found that slicing it in half and then putting the flat side down help with cutting it since it is hard.  I put olive oil on a cookie sheet and placed the beet slices on the sheet.  I baked them at 350.  I’m not sure how long it was, but until they were a little brown and tender.  Do not cook until they are mushy.  I suggest flipping them over at some point.  Mine where brown on one side and not the other.  Next time I will not leave them in as long as some shrunk.  They were so tasty!  It was a cross between a red beet and sweet potato.  I highly recommend them.

For the Napa Cabbage Salad I sauteed some onion, garlic, and green pepper (the onion and pepper was from the loft bag) in olive oil.  Before hand I shredded the napa cabbage and carrots.  After the onions go translucent add the cabbage and carrots and a bit more olive oil.  Stir around for a minute or two.  Add some soya sauce to taste. Keep mixing for a couple minutes. I did all of this in a wok.    I poured it into another bowl.  It is best in a smaller amount – side dish – then a main dish.  It was nice because it was warm for a fall day.

For Kale Chips clean the kale and dry in a spinner.  Rip or cut into bite size pieces.  Toss in olive oil and salt.  I rubbed oil on the bottom of the cookie sheet as well.  Place on a cookie sheet and place in the oven and cook until the kale is crisp.  I think about 7 – 10 min.  Sorry I can’t remember exact time.  Do not cook too long or they will fall apart, but make sure you cook long enough so they are crispy. Yes, they do turn crispy.  Eat warm.  These do not save.  Do not attempt to re-heat in the oven or safe for the next day.  They are best right out of the oven or shortly after.  Instead of salt I used Soya Sauce.  Be sure not to use too much sauce.

The Big 5KM Run!

Saturday was the big run day! We were very excited and happy that it was not at 6am. We got in the car and headed to Cambridge. We arrived shortly after 8:30am. We thought we were going to be there early, but there were already a few people there. We stood in line and got our running kit, timing chip, and handed in our pledges. Then we sat and sat and sat. Finally it was 9:45 and we took our stuff to the car and waited for the race to start.

It was interesting because we were in the middle and I heard someone say they thought they heard the national anthom. The front of the line started to get quiet and then the quietness worked its way back to the middle and then the end of the street wide group of runners. Silence. After the national anthom and a bit of cheering, the bag pipes played and at 10am we had 2 minutes of silence.

I don’t remember hearing a gun shot to start us off or really anything. All of the sudden everyone in front of us started moving. You could tell some of them really wanted to get going. We started at the Preston Legion and worked our way to King St. We were bunch together until we turned onto the road before King. By the time we hit King and Eagle people were more spread out and continued to be more thinned out as we went along. We were jogging with about 5 soldiers along the way. They were in their full gear. Boots, backpacks (including sleeping bags), and uniform. It was pretty cool to see them running. We would pass them and they would pass us until we hit the mark to split off for the 8K and 5K. They took a left to continue on the 8K trail and we veared to the right to take the 5K trail.

At 1K we cheered. We were happy. Although it seemed a lot harder then when we do it on our route that we are so familiar with. We know the ins and outs of the route and how much further we need to go to be finished our jog. Saturday was different. We didn’t know the route. We didn’t know where the street was that tells us we are half way done and the street that let’s us know we are almost finished. We also had breakfast before we ran. I know for the first 2K’s I could feel it in my side. I’m very thankful for the energy from the food. After I got in a routine of jogging I found it much better. I focused my breathing and concentrated on my setps.

Yeah, the 2K mark! Shortly after the 2K mark we did walk for a few minutes – probably about 5 minutes. Then we hit a dirt trail (we were in Riverside Park) so we decided to jog again on the nice cusiony surface. Although, at times we had to go over wooden bridges and there was still frost on them that made it slippery and a few pages of ice on the road in the park. But we pushed ourselves to keep going. I pushed myself and the girls. I had saw a spot before we entered that area and told the girls we could walk until that spot, but realizing that was much further then I thought I encouraged them to start jogging again. We came out of the trail and hit the 3K mark! We cheered!

Only two more K’s left! How exciting! We can’t walk now! Besides the one hill that we walked at a fast pace. I pictured where we were on our regular route and told the girls. I hope that was encouraging! Then the 4K mark. I am going to make it! We are going to make it!

We turned a corner and Julie says, “I better see the finish line!” There it was. But it still seemed far away! We turned onto the road that the finish line was on and Sue was already ahead of Julie and I and she was booking it! Then all of the sudden Julie starts going faster and faster! Oh no, I gotta get going! So I ran right beside her and we finished the run!! We finished out of breath, but we finished!

We completed the run at 40min. First Sue, then Julie and then myself. I must say that Julie and I did come in at the same time of 40 min and 23 sec.

We are so excited that we stuck with the Coach to 5K and that we accomplished our goal of completed the 5K Remember Run. Thank you to all who have been reading about my journey of running and to those who sponsored me financially. I was able to raise enough money to recieve a gift certificate from Socouney at Runner’s Choice. I hope to get a new pair of running shoes!

We still have two weeks left of the Couch to 5K to go and we will finish it. I’m not sure what is next. We do know that we won’t run outside during the winter months. Maybe we will do some kind of indoor exercise video or something. We do know that we want to start running again in the Spring and beat our time in the Remember Run next November. The lady who won 3rd place in our category ran it in 30min. I think that for us running it in 40 was awesome. Next year, maybe we can be at 30 minutes too!!

A week of 25 Minute Jog’s and a 5K Run

This morning was cold.  I normally wear a tuque because if there is the slightest bit of cold air it gets into my ears and then they feel funny and very uncomfortable.  But today, I had to wear mittens too.  I had room temperature water and when we got back from our jog it was cold!  This morning was really the first real cold day!  

As you know (if you are keeping up with my blog) that we jogged for 25 minutes on Friday.  I thought that we would be running a bit less today and working our way up again to Friday like previous weeks, but nope – it was another 25 minute jog.  In fact all week we will be running 25 minutes jogs.  Really, that gives us no excuse to want to run less and walk more because we will definitely know that we can jog 25 minutes.   Our phone holder didn’t even bring her iPhone that tells us when to walk and run because we know the route so well we know when to start jogging and when to stop.  I never thought that day would come.  

We did accomplish our 25 minute jog today and I know we will accomplish our 25 minute jog on Wednesday and Friday too!  The difference this week?  We have an extra 5k run on Saturday.  This was our goal to be participating in this run.  I thought it would never come, but it is here. At the beginning of Couch to 5K we thought that for our 5K run at the end we would be jogging for 10 min and walking for a few then jogging again, but really we could jog for 25 minutes!  Who knows, maybe we will surprise ourselves and jog the whole way!  That would be something to celebrate seeing that we still have two weeks left after this one to finish our Couch to 5K!

25 minutes – Check!

Week 6 – Completed!
25 Minute Jog – Check!

How exciting!  We jogged for 25 minutes this morning.  We do tend to jog a little bit slower on these long jogs to help us keep up and actually finish the run rather than give it our all and only make it half way.  We did loose one of the girls almost at the half-way mark because she has an injured knee.  We pray that it will heal over the weekend and she will be fit to jog on Monday morning. 

So the two of us that finished the 25 minute jog were not as excited as the first 20 min we ran.  I’m not sure why.  Maybe because all three of us weren’t there or maybe because we were tired by the end of it.  By the time we got back to the apartment we were happy and excited!  I’m glad that we are continuing with this jogging.  My fellow jogger asked if I would keep this up after we are done.  That is a great question.

I was actually just talking about this with my Fiance, because I have a gym membership but I haven’t been going.  Do I cancel and work out on my own?  Do I put it on hold incase in the winter I slack because of the weather and need the gym?  I would like to say I am going to keep jogging, but it is hard when you are on your own.  It has been great jogging with the girls for the encouragement and forcing me to go because there is someone else there.  We did talk a little bit about doing something together after we are done running, but we will have to see what that could be.  Even if it is just exercising together. 

We have 3 more weeks to decide!  Jogging has been in place of soccer which runs from Sept to the Spring, so I need to find something.  I’m not one for jogging in the snow! 

Our 5k run is a week from Sat (Nov 6).  Yikes.  We are going to be two weeks away but I know we can do it!  If you would like to pledge me, just let me know!  The funds go to the Poppy Fund for the Veterans.  I’m sure that run will be something to blog about!

Ready to start week 7 on Monday!!  I would tell you what awaits us, but I don’t know!  It will be a nice surprise at 6am on Monday morning.

No excuses!

We are in week 6 of our running (not including the two we had to take off).  We have switched over to running in the morning on Monday’s along with Wed and Fri.  I actually wasn’t going to go on Mon because I didn’t go to bed early enough and was extremely tired in the morning. I thought, “I’ll just run later on my own.”  I laid in bed for a few more minutes.  “Who am I kidding.  I’m not going to run on my own.”  So I dragged myself out of bed and went for the run anyway.  I have no excuses not to run – unless I am seriously injured or sick.  I wasn’t either!  I’m glad I did go, but I thought the run was never going to end.  It wasn’t even a hard one like we did on Friday – a whole 20 minutes straight.  We jogged 5 and walked jogged 8 and walked and then jogged 5 again.  How hard is that.

What does this mean?  It doesn’t matter what time we run on Monday.  It’s Monday and it’s not easy to do much on Monday.  The lesson learned:  Go to bed early on Sunday night!  
This morning we jogged 10 min walked 3 min and jogged another 10 min.  It was better then Monday but I was still catching my breath at the end.  Maybe we jogged a little faster today.  And guess what kids, Friday we jog for 25 minutes straight.  Wow… I’m sure we will do it!  What’s 5 more minutes?  We do have to expand our route a little bit.  We did today by a block.  
One thing that surprises me is that I enjoy the mornings.  It’s quiet, besides the chirps of Buddy and meows of Milo both wanting my attention and food!  I get things done like cleaning or laundry or reading.  Jogging forces me to get up early.  I’ve tried to go back to bed twice (one of those days being Monday), but it just doesn’t feel right.  I wonder if I should do it Tues & Thurs?  It’s hard to wake up without having to run though.  Maybe on those days I will go for a walk.  
Who needs coffee in the morning when you go out in the crisp fall air for a jog or walk.  That’s my jolt for the day!
