Dukan Diet: Attack Phase DAY 1

My day is just about over and I have survived day 1 of the Attack Phase of the Dukan Diet.

How do I feel?  A bit hungry.  I might need to find a snack before bed.  Beef jerky is being made as we speak so maybe it will be ready and I can snag a piece of that!  Definitely excited to try it.  Earlier I felt a headache coming on, but it seems to have lifted … I think.  That could be the fact that I didn’t have sweets today!  First day in a long time that I didn’t have any sweets or candy.  I feel a little bit
tired, but that also could be from staying up later than usual lately.  I will get to bed at a decent time tonight.  Other than that I feel ok.  The book says I will start to feel really good and have lots of energy in a couple of days.  It also says that I won’t feel hungry by the second day.  I’ll let you know tomorrow night!

Todays Menu:

For breakfast (or should I say lunch – I slept in this morning):  scrambled eggs and a side of sardines in tomato sauce (only sardines we are allowed). We are also limited to 2 eggs per day.

Mid afternoon sack: beef cubes dipped in mustard (we aren’t allowed ketchup!) and a few sugar free pickles.

Supper:  Seafood chowder (shrimp, salmon, muscles, and some other seafood things mad in skim milk with a little bit of onion, chalets, dill seed, and pepper).  It was pretty tasty.  I did miss vegetables though.

Evening Snack:  Low-fat flavoured yogurt (we are not allowed yogurt with chunks of fruit in it).

I do think I need one more snack before bed.  I’ll find something.

I have also drank three classes of water, 2 cups of tea, and 1 cup of coffee (yes, I know I said I wasn’t going to drink coffee anymore – I’m working on it! See Coffee Pu’reh)

Side Note: My cat just decided to drink my water!  Thanks Milo!  I’m off to get new water and find a snack!

**UPDATE**  for my bedtime snack I am frying up some lean hamburger and putting some Greek Yogurt with it.  This is definitely a first!!  If you love meat you will love this diet!

Coffee Pu’erh

The taste.  The smell.  The thickness of it.  The endless options to put in it.  Coffee, that’s what I’m talking about.  I like a good cup of coffee in the morning.  I have slowed down since about a year ago when I had to stop drinking coffee altogether.  But I started up again last Spring!

I could drink lattes again that weren’t decaf!  I was able to drink coffee again and feel no pain!  That was exciting.  But the last couple of weeks have been sad.  The sad realization that I am going to have to give up coffee once more.  I wonder if it will be harder to give up coffee than it was to give up Facebook?

I’ve done it once, so I can do it again.  Right?  I just love the taste and the feel of coffee.  I love adding eggnog or chocolate milk and maple syrup.  Oh and my favourite, a little cod liver oil, just kidding!  Coffee is comfort.  Coffee is good.  Do you get my drift?

I love tea.  I have a variety of loose leaf tea (which is way better then tea in a bag – sorry Tetley).  It’s just not the same.  I don’t add anything to it so it is like drinking flavoured water, which I don’t mind but I just don’t get the same feeling as when I drink coffee.  It’s different.

HOW AM I EVER GOING TO SURVIVE?

The answer:  Coffee Pu’erh

It is a tea!  I had never heard of it before until one day I visited David’s Tea in the city.  I thought I would try it out.  Today is the first time I’ve had some.  It’s dark!  It looks like coffee.  Not the same taste of coffee, but I think it will do the job.  I thought of adding a little eggnog to see what happens.  Today I will just have it black.  Here is what David says about this tea:

“Pu’erh has come a long way since its heyday as a tribute tea to Chinese emperors a thousand years back. It’s still got that legendary healing power, but the new “cooked” varieties are really something special.  it combines coffee, chocolate and a touch of caramel flavour.  Rich, smooth, aromatic and subtly sweet.  Even your coffee-addict friends will go crazy for it.”

As I take another sip it kind of reminds me of after being out in the snow all afternoon and your mittens are soaked and your hands smell like sweat and wet mittens and you can kind of taste it in your mouth.  Now I know you really want to try it!

Let it Snow: The Storm

It SNOWED!  On Tuesday the awesome weather forecast said that on Wednesday we would get 30 – 40 cm of snow.  We really did get it.  I woke up around 6:45a.m. and the snow was already falling and didn’t stop until around 10 or 11 that night.  Sometimes it was light snow, and it was the worse in the afternoon. I managed to get the animals all snug in there homes.  Afternoon classes were cancelled, but I did not go in to school in the morning either.  I thought I would share some pictures with you from the first “real” snow fall of the season (we had a light dusting a couple of weeks ago).

I took this the night of the storm.  
Let’s say I wasn’t looking forward to digging it out in the morning.
This morning as I think about what to do.
Dig out and go to school?  
Classes ended up not starting until 10, but I still would not make it on time.
Plus no winter tires yet make for not fun driving.
Tried to get into the car.  I really needed to shovel!

I did get myself dug out!  It took me about an hour to shovel around the car.  I had to take a break halfway through.  I’m not use to doing something like that!  It was good exercise.  I love the snow, I just don’t like driving in it.  My favourite things to do in the winter:

~ Sit on a comfy seat and watch the snow fall while sipping a hot cup of tea/hot chocolate/coffee
~ Snow shooing
~ Ice skating (outdoor or indoor)
~ Playing in the snow
~ Going for walks

Back to God’s Country

Heading back to the homeland – to God’s country – to a beautiful place that I miss and love.

I’m sure that most of us think that where we come from is God’s country, but the Maritimes are so beautiful.  Yes, I know I haven’t been out West yet to compare, but one day I will get there and I will probably still say that the Maritimes is God’s country.  Some might argue about which part specifically is the best, but I say it all is great and wonderful.

For my reader’s who don’t know, my journey has a bend in the road and I am indeed heading back to God’s country in the fall.  It was not an easy decision to make.  It is going to be challenging and a lot of hard work.  The easy and safe road would be to stay here, but I have been called to do more and so I am off.  Where to exactly?

I’m heading back to school to get my Masters of Divinity at Acadia.  I’m excited about this as I will be closer to family (so close I will be living with my sister).  I can see my niece more often (very much looking forward to this).  I get to study full time again.  Something that makes me a bit nervous, but with the help of Christ I will make it through.  At this time in my life I need a bit of change and have the sense that God is leading me back to God’s country.

The program is 3 years.  So for these next few years, that is where I’ll be.  If you are someone I’m leaving behind in Ontario I want to take this time to tell you that Nova Scotia is an awesome place to take vacation!  Which means you will have to let me know you are coming so we can get in a visit!  For friends and family that I am coming back to – I will see you soon!

I don’t know where I will be after 3 years, but I do know that I want to encourage leaders in Children’s Ministry and encourage networking among this very important ministry to kids and their families.  It is so important that these amazing leaders have support among each other and know about the resources that can help them do ministry 100 times better.  From experience, I know how important this is and is a ministry in itself.

Yes, I am excited to go back to my family and friends in the Maritimes.  Yes, I am sad to leave my friends and church family that I have grown to know over the past 9 years here in Ontario.  No, I won’t go insane over the next 52 days trying to pack, finish things up at work, and try get everything done on my Ontario Bucket List (already have 2 things checked off)!

Don’t worry, I still plan to blog along the way!  I will have something new to blog about – going back to school!

Little Update from Ontario

Hi!
It’s me…Erin Jackman.

Just thought I would start a blog. Not sure who will read it but that’s ok. Just one of those things that if I feel like writing I can come here and do it. Or maybe I will turn it into my update blog.

So you can follow the journey or not. It’s up to you!

Right now! Hmmm….right now I’m about to leave work. I work at Stanley Park Baptist Church as the Children’s Ministry Director. I enjoy it, although sometimes it has it’s challenges.

I also work at Extend-A-Family. I like that too. At least I am doing jobs that I like! Extend-A-Family is a organization that funds families with individuals with special needs. This way the family can have someone give relief or take care of the individual with special needs. I work with three different kids. Two boys and one girl. They are all pretty good kids and fun to work with!

So, that’s work. This is just a little bit about what I’m up to now a days. I’m playing soccer on Thursday nights with a league in the area. I’m enjoying that and glad to be playing again! Love it!

I haven’t been doing as much painting lately, but would like to do more. I have been scrapbooking some. My roomate/good friend also scrapbooks, so that helps! I did go to a friends to scrapbook and she has a cricit! So cool! For those who are none scrapbookers, it’s not a bug! 🙂

I got home in November for mom’s birthday and a best friends wedding. I didn’t get home for Christmas though. It was nice to stay around here, but I missed being at home for Christmas too. Hopefully next year. It was nice having my boyfriend (Besmir) and my roomate/goodfriend (Kristin) around to celebrate with. Besmir and I did a lot of visiting and there was 7 of us for Christmas Dinner on Boxing day! Yeah for leftover Turkey!

I’ll get home this summer cause my brother is going to be a dad and gotta see the baby! And my cousin is getting married. So I’ll take a little vacation that way. I’m looking forward to it!

Well, I think that will be all for now. I have to save something to write for next time!

By the way, if you are on Facebook and have me as a friend, I like to play WordTwist and you should play the game with me! I also do that in my spare time. My goal is to beat my mom more then once and to beat Nancy (my cousin!), oh and Aunt Laurie too! 🙂
