Mango Pad Thai

It’s Pad Thai …. kind of.  I have recently enjoyed eating pad thai as long as it is not too spicy or really no spice at all.  Someone asked for the recipe of the dish you see in the picture.  The problem is I just took a recipe and then only used a certain ingredients to make the sauce and the rest I just through in.  So I will do my best to tell you how to get the dish in the picture.  Then i will give you the recipe I took the sauce idea from.  So what do I call this delicious dish?  Continue reading →

Dukan Diet: Noodle Bowl

As some of you know I am cleaning houses for a part time job while I’m in school.  At some houses we get little treats or tips, but my favourite house so far was a man who gave us recipes.  He even gave us some seeds to help us out with the recipe.  Not everyone has cumin and coriander seeds kicking around.

I decided to add this soup to my Dukan Diet Series because you can have it in all phases depending on how you serve it.  In this post I will explain how dish it up in a variety of ways and of course give you the recipe! Continue reading →

Best Brownies Ever

Boxed Brownies … never again.  Well, not that I made them very often anyways.  I’m not sure why but brownies is something I never really made much.  A while ago I found a recipe that I thought looked pretty easy so I wrote it in my little recipe book of favourites (which I don’t usually write in until I make the recipe and see that it is book worthy).  Well my friends, this recipe is definitely a keeper!  They were absolutely delicious.  I couldn’t stop eating them.
Thank goodness I have a little more freedom with what I can eat now (see my Dukan Diet Series).  I had company over the other night so I made them for dessert.  Wow!  So good!

Dukan Diet: Food Substitution

I’m on the third phase of the Dukan Diet, which means I can have a few more foods than on the previous phase.  I’m really enjoying this phase much better, and I am still losing the weight.  Not as fast as in the first two phases, but that is all right with me.

I was looking through a recipe book to find a whole wheat pizza dough recipe (because tomorrow I am having a celebration meal of home made pizza – I’m excited) and I found a good muffin recipe.  They taste good, but one does have to remember they are a very healthy recipe.  If you are looking for a muffin filled with sugar this is not the right recipe for you!

Applesauce Pumpkin Muffins

Can you see how healthy they look.  They are from “The Eat-Clean Diet Cookbook by Tosca Reno.  I picked it up last Spring when visiting a friend in Muskoka.  I browsed through the book and it seemed to have a lot of healthy recipes in it, so I was sold.  I think
this is the first recipe I’ve made from the book … it’s a start.  I know you want to run right into your kitchen and make these yummy healthy muffins, so I will share the recipe with you and my recommendations after making them myself.  I feel like I can substitute one of these muffins for a piece of bread that I am allowed in this phase.

Ingredients:
1 c old-fashioned oatmeal, not instant
1/2 c unsweetened applesauce
1/2 canned pumpkin
2 large egg whites + one yolk, lightly beaten
2 tbsp + 1 tsp canola oil
1/2 cup of milk or milk alternative or 1/2 c apple juice
1 tbsp double-acting baking powder
1/2 tsp baking soda
1 tsp cinnamon
1/4 tsp ground nutmeg
1 tsp pumpkin pie spice
1/2 c amaranth or quinoa flour or flour of your choice
1/4 c whole wheat flour
1/4 c maple sugar flakes
1/2 c dried cranberries or raisins (optional)

Preparation:
1. Preheat oven to 375F/190C. Line muffin pan with paper or silicon liners or coat with cooking spray.  (Let’s face it, paper is the easiest way to go for clean up after!)
2. Combine oatmeal, pumpkin, applesauce, juice or milk, eggs and oil.  Mix until all ingredients are blended.
3. Measure and mix all dry ingredients.  Make a well in the centre and pour wet ingredients into dry.  Add dried fruit if using.  mix until dry ingredients are just moistened.  Fill muffin cups 2/3 full.  Bake 15 – 20 min or until lightly browned on top.

Suggestions:
The book suggests to have some light cream cheese with them.  They seem to be like they would be a good breakfast treat.

My Recommendations:
The only thing I did differently to the recipe is that I forgot the extra 1 tsp of oil.  I also used fresh-frozen cooked pumpkin instead of canned.  I used skim milk.  I used normal baking powder.  I used flax flour as “your choice”.  I didn’t have maple sugar flakes but I had maple sugar pearls, so I used some of those but I didn’t use a full 1/4 cup, so my muffins have very very little sugar.  You could leave out this step or if you don’t have the flakes you could probably use real maple syrup or honey instead.  I will try one of those options next time.  I also did not add any raisons or cranberries.  Mine took about 25 min to cook.

Dukan Diet Consolidation Phase Update:
I don’t have much new to report but that I am 9 lbs away from my goal weight.  How exciting is that?  I went to the grocery store today to buy 1 thing and came out with one thing not even thinking about buying chips or any of that junk (even thought it still tastes good).  When this phase is over all that is left is the last phase that is there for the rest of my life – 1 protein day a week.  I’ll be glad when I get to that phase.  It’s not too far off now.  It definitely has been an interesting process for me.

Fried Cauliflower

I learned how to make this delicious food from an Albanian.  I don’t know if people make it around here, but it was the first time I heard about it.  I don’t have a recipe written out, as I learned Albanians don’t go by “recipes”.  They cook and bake by how it looks, feels, and tastes.

That was something new for me who typically needs to follow the recipe – especially when baking.  I’m a little more flexible when I cook.  I am going to attempt to write out a recipe for you incase you are so inclined to try cooking these up yourself.  They are definitely worth a try.


Ingredients

Chunks of cauliflower
2 – 3 Eggs beaten
2 – 3 tbs flour
pinch of salt
Vegetable oil (or Olive Oil)
Directions
1.  Cook the cauliflower in boiling water until tender.  They taste much better when this is done, I know from experience of forgetting to cook them first!
2.  While the cauliflower cooks, beat the eggs and add some flour and salt to make a light batter.  You should have more egg then flour.  It is not a thick batter.  
3.  Drain cauliflower and take the bite size pieces and coat in batter.  It should look like a think layer on the cauliflower – just enough to coat it lightly.  
4.  Heat enough oil in a pan so that when you place the coated cauliflower in the pan, the are mostly covered.  Once oil is heated, place as much coated cauliflower as the pan will allow.  
5.  Turn over when batter begins to brown.  The batter should fluff a bit.  
6.  Remove from oil when they are a golden brown (see picture above).
7. Serve warm and enjoy!  
These are best eaten fresh, although they can be saved for the next day.
The last time I made this I served them with salmon, beats, beat greens, and roasted sweet potato.  It made for a delicious meal!  Since they are fried, I don’t make them often, but they are a nice treat to have once in a while.

Easy Shake and Bake Chicken

Food…mmmm.

On my way home from going to a great book sale in New Hamburg, I thought about what to cook for supper.  Chicken.  Cooking chicken the same old way can get pretty boring.  I was also hungry so wanted something that would take too long but also be cooked!

I ventured onto my favourite online recipe site:  www.allrecipes.com and typed in “shake and bake chicken”.  That’s what I wanted to make but I didn’t have any shake ‘n bake at home.  I was sure there would be a recipe that didn’t require the store bought shake ‘n bake.

After a few minutes of looking I found the following recipe:

Ingredients

  • 3 pounds chicken, cut into pieces
  • 1/2 cup all-purpose flour
  • 1 teaspoon salt
  • 1 teaspoon paprika
  • 1/4 teaspoon sage
  • 1/4 teaspoon ground black pepper
  • 1/2 cup butter

Directions

  1. Preheat oven to 450 degrees F (230 degrees C).
  2. Mix flour, salt, paprika, sage and pepper together in a bag. Add chicken parts in a bag and shake until well coated.
  3. Melt butter/margarine in a 9×13 inch baking dish in the preheated oven. Place chicken in the baking dish skin side down and bake for 20 minutes. Turn pieces and bake another 20 minutes until tender and juices run clear.
 
I modified the recipe a bit.  Sometimes I like to take recipes and make them my own.  Or maybe it is because I didn’t have everything for this recipe.
 
I used two boned pieces of chicken.  I used whole wheat flour instead of all purpose flour and I used Montreal Steak Spice instead of paprika and sage. Next time I will try it with olive oil instead of butter hoping for a more healthier alternative.   I followed the rest of the directions – cooking it at 350.  My oven is a bit hotter then it should be.  I also think I cooked it for about 10 more min longer then suggested.  
 
The result:  mmm mmm goodness!  Crispy.  Delightful.  I ate it all before anything else on my plate, well with a few bites of whipped potato in between.  Definitely something that I will cook again.  I like good easy recipes.  Oh, and I went to take the drumstick off the breast and it came off without the meat.  I love it when chicken falls of the meat!  So good!
